Room temp steak and a really hot pan are the answer, I was trying to cook a very cold steak on a cold pan. No wonder it didn't work!!! I just finished it. It WAS lush I took the steak out the fridge about two and a half hours before cooking so it was at room temp all the way through. And I had the griddle pan really hot. Seasoned it well. No oil. Put it on the pan and resisted the temptation to turn it until I could see it was cooking on one side, then turned it, that was after three and a half mins, then did the same time for the other side. Juicy and tender, it was sensational Slathered in ketchup, wow
